Liza Ashley's Sweet Potato Pie Recipe
- 6 1/2 c. cooked & mashed sweet potatoes
- 1 c. granulated sugar
- 1 c. brown sugar
- 6 Large eggs, slightly beaten
- 1/2 teaspoon ginger
- 1/2 teaspoon allspice
- 1 teaspoon cinnamon
- 1 teaspoon nutmeg
- 1 teaspoon vanilla extract
- 1 1/2 (13 ounce.) cans evaporated lowfat milk
- 2 sticks (1 c.) butter
- 2 uncooked (9") pastry shells
- Pecans & whipped cream for garnish
- Mix all ingredients (through the butter) together, pour into uncooked fluted pie shells.
- Bake at 475 degrees for 10 min.
- Reduce heat to 350 degrees and bake 45 min.
- Garnish with pecans and whipped cream.
- Makes 2 pies.
