Sausage, Peppers, And Onions Recipe
- 1 lg. onion
- 3 lg. green bell peppers
- 3 tbsp. extra virgin olive oil
- Salt and freshly grnd black pepper to taste
- 1 pound warm Italian pork sausages
- 3/4 c. dry red wine
- Wash peppers; remove stem ends and seeds.
- Cut into large chunks; slice onions.
- Pour extra virgin olive oil into oven-proof, flame-proof baking dish.
- Saute/fry pepper chunks and onion slices in extra virgin olive oil till they begin to soften.
- Sprinkle with salt and pepper to taste.
- Remove peppers from dish; set aside.
- Brown sausage in same dish.
- Add in wine.
- Cover; bake in preheated 350 degree oven 40 min.
- Uncover; add in sauteed green peppers.
- Bake about 30 min longer.
- Serve at once in same baking dish.
