Southern Chicken With Cornbread Recipe
- 2 lg. fryers
- 3 med. onions, coarsely minced
- 1 lg. green pepper, coarsely minced
- 1 green onion, coarsely minced
- 1 1/2 rib celery, coarsely minced
- 5 carrots, thinly sliced
- 1 (15 ounce.) can English peas, liquid removed
- 4 hard boiled Large eggs, coarsely minced
- Salt to taste
- Pepper to taste
- Cook chicken till tender.
- Save broth.
- Debone.
- Chop meat in large pcs.
- Combine chicken and all ingredients except peas and Large eggs.
- Cook in broth till done.
- Add in peas and Large eggs.
- Serve on split cornbread squares or possibly muffins.
