Stir-Fry Prawns in Black Bean Sauce

  1. In a small bowl mash together black beans, half the garlic, and ginger until mixture forms a paste.
  2. This can also be done in an electric minichopper or small food processor.
  3. Set aside.
  4. Peel and devein prawns.
  5. In a wok or large skillet over medium-high heat, saute onion.
  6. Add remaining garlic, bok choy, bell pepper, and mushrooms.
  7. Stir-fry for 5 minutes.
  8. Add cabbage, snow peas, and black bean mixture.
  9. Cover and let cook for 2 to 3 minutes.
  10. In a small bowl mix together miso and broth.
  11. Add to stir-fry with honey, soy sauce, and prawns.
  12. Stir-fry until prawns turn pink.
  13. In a small bowl mix together arrowroot and the water and add to stir-fry.
  14. Cook until slightly thickened (3 minutes).
  15. Serve at once.
