Nanny's Coconut Pie
- 34 cup sugar
- 14 cup cornstarch
- 18 teaspoon salt
- 3 cups milk
- 3 egg yolks, beaten
- 1 cup flaked coconut
- 1 12 tablespoons butter
- 1 teaspoon vanilla
- 1 pie shell, baked
- meringue
- Combine first 3 ingredients in a heavy saucepan.
- Combine milk and egg yolks ; gradually stir into sugar mixture.
- Cook over medium heat, stirring constantly, until mixture thickens and boils.
- Remove from heat and stir in coconut, butter and vanilla.
- Pour filling into cooled pastry shell.
- Cover with waxed paper, pressing to touch filling.
- Set aside until cool.
- Remove paper and cover with Merinque, touching crust all around.
- Bake in a pre heated oven @ 425 * for 6-7 minutes or until meringue is lightly browned- watch closely !
- You may skip the meringue and top w/ whipped cream.
