Baked Sour Cream Potatoes
- 4 cups peeled potatoes (cubed and cooked)
- 12 cup chopped onion
- 2 tablespoons butter
- 14 cup breadcrumbs
- 14 cup grated cheese
- 2 beaten eggs
- 1 cup sour cream
- 1 teaspoon salt
- 1 dash pepper
- Put the prepared potatoes in a buttered 1 quart casserole.
- Simmer the onion in butter.
- Sprinkle the onion, bread crumbs and cheese over the potatoes.
- Combine the eggs, sour cream, salt and pepper and pour over the potatoes.
- Top with more grated cheese.
- Bake at 350 for 25-30 minutes or until thoroughly heated.
