Banana Orange Raisin Bread
- 2 1/2 cups flour, all-purpose
- 3/4 cup wheat germ
- 1/2 cup sugar
- 2 teaspoons baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt (optional)
- 3/4 cup raisins, seedless or chopped dried figs
- 1 each eggs
- 2 each egg whites
- 13 cup vegetable oil
- 1 cup bananas mashed ripe
- 3/4 cup orange juice
- 2 teaspoons orange zest grated
- 1 teaspoon vanilla extract
- Heat oven to 350?F.
- Spray 9 x 5-inch loaf pan with non-stick cooking spray.
- In a large bowl combine dry ingredients, mixing well; add to dry ingredients.
- Mix just until moistened.
- Pour into prepared pan.
- Bake 60 to 70 minutes or until wooden pick inserted in the center comes out clean.
- Cool 10 minutes; remove from pan.
- Cool completely.
