Grilled Hanpen Fishcake with Mentaiko and Cheese

  1. Halve the cheese.
  2. Cut the hanpen into fourths, then make small cuts in the side just enough for the cheese to fit.
  3. Spread mentaiko in the slit and sandwich the cheese.
  4. Heat vegetable oil in a pan.
  5. Align the hanpen.
  6. Grill both sides as you press it down with a spatula, making sure it doesn't open up too much.
  7. Wrap around with the nori strips to finish.
