Handmade Pasta to Make Your Guests Speechless
- 100 grams Cake flour
- 100 grams Bread (strong) flour
- 2 Eggs
- 1 dash Olive oil
- 1 dash Salt
- Sift the cake and bread flour.
- A sieve or mesh colander should work.
- Crack in 2 eggs.
- It's bad of the shell falls in, so I suggest adding cracking them into a different bowl before adding them.
- (A rare piece of good advice from me!!)
- Knead.
- It might not seem like it will come together properly, but keep at it.
- Add a bit of olive oil and salt once to comes together a bit.
- Keep kneading.
- Give it a punch every now and then.
- It's go to go once you can press it with your finger and the dough springs back.
- It should take about 10 minutes up to this point.
- By now, you should have developed some affection for this ball of pasta dough.
- Wrap it in plastic wrap and let it sit for 1-2 hours.
- Dust with cake flour, and roll out with a rolling pin.
- There are no rules.
- Spread it thinly enough so that you can see your hand through the dough.
- Cut the noodles to your preferred thickness and length.
- The task of rolling out the noodles will make you want a pasta machine.
