Potato and Pickle Salad
- 1 1/2 pounds red potatoes
- 1/4 cup mayonnaise
- 1/4 cup whole grain mustard
- 1/4 cup prepared horseradish (or fresh grated)
- 1/4 cup pickle juice
- 1 medium onion
- 2 half sour pickles
- Salt and pepper
- Quarter the potatoes and boil until just cooked.
- Drain and rinse.
- Mix together mayonnaise, mustard, horseradish, and pickle juice.
- Transfer still warm potatoes to mixing bowl and blend in dressing.
- Chop pickles and onions to 1/4-inch dice and add.
- Season with salt and pepper.
- Serve chilled.
