MJs in the Cupboard Pork Tenderloin
- 1- 1/2 pound Pork Tenderloin
- 1/2 cups Badia Mojo Marinade
- 2 Tablespoons Oil, Or As Needed
- 1/4 cups Red Cooking Wine
- 1 Tablespoon Balsamic Vinegar
- Marinate the pork tenderloin in the Badia mojo marinade or your choice of mojo marinade for 1 hour.
- I cooked this in a cast iron skillet on top of the stove.
- Brown the pork tenderloin in an oiled pan, 10 minutes on each side.
- Salt and pepper to taste.
- When browned, add the red cooking wine or wine of your choice and the balsamic vinegar.
- Cover and simmer 10 minutes.
- (I added 1/4 cup of water to the pan to stretch the really tasty sauce.)
- Served with some roasted potatoes.
