Grilled Swordfish

  1. As always, wash the fish before preparing.
  2. Starting on one side of the fish, gently sprinkle the garlic powder, black pepper, and salt.
  3. Massage the dry rub in with your hands and repeat for the second side.
  4. Take the lemon, cut it in half, and squeeze lemon juice from one half over the tops of both filets.
  5. Put aside, flip the filets and repeat with the second half.
  6. Pour the olive oil over and around the fish.
  7. Lift the filets to make sure olive oil is applied to both sides.
  8. Place the lemon halves with the cut side down on top of each filet.
  9. Let marinate for 8-12 hours.
  10. (I marinated this the morning of, around 8am, and made it for dinner around 7pm)
  11. To cook, prepare the grill for 400.
  12. Once ready, place fish filets on grill and flip every 3-4 minutes to prevent burning.
  13. Cook for 15-20 minutes this way, until the fish flakes delicately to the touch.
