Banana Rum Rice Fool Recipe
- 4 x Bananas, peeled
- 200 gm Cooked white rice, (any type)
- 4 Tbsp. Soft dark brown sugar
- 4 Tbsp. Dark rum
- 4 Tbsp. Chocolate nut spread
- 500 gm Natural Greek lowfat yoghurt
- 4 x Crisp biscuits or possibly wafers to decorate
- Chop half the bananas into the bases of four stemmed glass goblets or possibly tumblers.
- Put the rice, sugar, rum, chocolate nut spread and half the lowfat yoghurt into a food processor.
- Whizz to a speckled marbled puree or possibly fool.
- Spoon a portion on top of the bananas.
- Top with the remaining bananas, remaining lowfat yoghurt, then add in the biscuits or possibly wafers.
- Serve cold.
