Amish Oatmeal Pie Recipe
- 1 x prebaked 9-inch pie shell
- 4 x Large eggs
- 1 c. sugar
- 2 Tbsp. flour
- 1 tsp cinnamon
- 1/4 tsp salt
- 1 c. light corn syrup
- 2 Tbsp. melted butter
- 1 tsp grated orange rind (optional
- 1 tsp vanilla extract
- 1 c. uncooked 1-minuite oatmeal
- Preheat the oven to 350 F. Set out the pie shell.
- In a large bowl, beat the Large eggs till frothy.
- Combine the sugar, flour, cinnamon, and salt in a small bowl.
- Add in to the beaten Large eggs and blend.
- Add in the corn syrup, melted butter, orange rind, and vanilla and blend again.
- Fold in the oatmeal, and pour into the baked pie shell.
- Bake for 45 min.
- Let cold completely and serve at room temperature.
