Truffles

  1. Heat cream and butter to boiling point; pour over chocolate chips in a glass bowl.
  2. Let sit 5 minutes.
  3. Beat in Bailey's until smooth.
  4. Chill until firm.
  5. Quickly roll into 1-inch balls.
  6. Roll in cocoa powder, unsweetened drinking chocolate, chopped nuts or dessiccated coconut.
