Truffles
- 1 pint whipping cream
- 2 tbsp. butter
- 12 oz. chocolate chips
- 2 tbsp. Bailey's Irish Cream
- Heat cream and butter to boiling point; pour over chocolate chips in a glass bowl.
- Let sit 5 minutes.
- Beat in Bailey's until smooth.
- Chill until firm.
- Quickly roll into 1-inch balls.
- Roll in cocoa powder, unsweetened drinking chocolate, chopped nuts or dessiccated coconut.
