Kiwi With Ricotta Cream
- 14 cup sugar
- 2 tablespoons sugar
- 14 cup lime juice
- 8 kiwi, peeled and cut in 1/2 inch cubes
- 12 teaspoon grated lime zest
- 12 cup ricotta cheese
- 2 tablespoons sour cream
- In a medium bowl, combine 1/4 cup of the sugar and the lime juice.
- Add the kiwi, tossing to combine.
- Cover and refrigerate until serving time.
- In a small bowl, combine the lime zest, ricotta, sour cream, and the remaining 2 tablespoons of sugar.
- Serve the kiwi, with its syrup, topped with the ricotta cream.
