Sausage and Cherry Tomato Quinoa

  1. In large skillet, cook sausage until no longer pink.
  2. Remove to plate lined with paper towels.
  3. Wipe out skillet.
  4. Add oil.
  5. Add tomatoes and cook, stirring for 4-5 minutes or until skin begins to split.
  6. Reduce heat to medium and return sausage to the pan, along with the quinoa and wine.
  7. Cook, tossing gently to combine, until warmed through.
  8. Serve sprinkled with cheese and parsley.
