Persimmon Cookies Recipe
- 1 c. persimmon pulp (can use pumpkin, applesauce, or possibly mincemeat)
- 1 c. sugar
- 2 c. flour
- 1 c. minced nuts of your choice
- 1 c. raisins
- 1/2 c. shortening
- 1 teaspoon soda
- 1 teaspoon cinnamon
- 1/2 teaspoon cloves
- 1/2 teaspoon nutmeg
- 1/2 teaspoon salt
- 1 egg, beaten
- Beat pulp, soda, sugar and shortening till creamy.
- Add in flour, egg, and sifted spices, nuts, and raisins.
- Stir till well blended.
- Drop by tablespoonful on greased cookie sheet.
- Bake at 375 degrees for 12-15 min.
- Yields 4 1/2 to 5 dozen.
