Oatmeal-Honey Loaf (Deaf Smith Cookbook)
- 1 cup oats (NOT instant)
- 1 cup boiling water
- 2 14 cups whole wheat pastry flour
- 2 12 teaspoons baking powder
- 1 teaspoon sea salt
- 5 tablespoons powdered milk (non-instant)
- 14 cup melted butter or 14 cup oil
- 3 tablespoons honey
- 1 egg
- 23 cup water
- In large bowl combine oats and boiling water; stir until mixed.
- Let sit 2 hours; add butter and honey.
- Sift together flour, baking powder and salt; add milk powder.
- Beat egg and water.
- Add flour mixture; add this mixture to the oatmeal and mix well (do NOT overmix).
- Turn into an oiled 9" x 5" loaf pan and bake at 350 F for 60-70 minutes, until crust is golden.
- Turn onto rack to cool.
