Carrot and Zucchini Fritters

  1. Grate zucchini, carrots and onion using large side of box grater; squeeze out excess liquid.
  2. In a large bowl, mix together vegetables, cheese, flour and eggs.
  3. Heat oil in large skillet over medium-high heat.
  4. Drop 6 mounds of batter (2 Tbsp.
  5. each) into skillet; flatten slightly with spatula.
  6. Cook until golden brown and cooked through, 2 to 3 min.
  7. per side.
  8. Transfer fritters to paper towel-lined plate to drain.
  9. Repeat with remaining batter.
  10. Serve with sour cream.
