Christmas Cookies
- 1 cup butter or margarine
- 1/2 cup granulated sugar
- 1/4 tsp. salt
- 2 large egg yolks
- 2 1/2 cups all-purpose flour
- 1 (10-oz.) jar raspberry jam
- 1 cup chocolate chips
- 4 large egg whites
- 2 cups walnuts, finely chopped
- 1 cup granulated sugar
- Cream the butter and 1/2 cup sugar.
- Beat in the salt and egg yolks.
- Add the flour kneading with your hands to make a soft dough.
- Pat in bottom of a 10x15-inch jelly roll pan.
- Bake for 15 to 20 minutes in 350 oven or until lightly browned.
- Remove from oven and spread with jam and chocolate chips.
- In a deep bowl, beat the egg whites with a rotary or electric beater until stiff peaks form.
- Use a rubber spatula, fold in the chopped nuts and 1 cup sugar.
- Spread over jam.
- Bake 25 minutes at 350.
- Cool 15 minutes, cut into 30 bars while still warm.
