pickled onions

  1. bring vinegar, cumin, salt and sugar to a boil in a saucepan, then reduce heat and simmer 5 minutes add onions,simmer for 2 minutes more.
  2. transfer to a bowl, stir in cilantro.
  3. this tastes better after it sits for a few days or more, covered and refrigerated.
