Spicy Chipolte Texas Chili
- 1 12 lbs ground beef (Organic tastes best)
- 2 sweet Italian sausage links
- 12 red onion, diced
- 1 teaspoon garlic paste
- 1 tablespoon olive oil (California preferred)
- 1 (14 1/2 ounce) can diced fire-roasted tomatoes (like Muir Glen Organic)
- 1 (7 ounce) can chipotle chiles in adobo, diced (like Goya)
- 5 pieces roasted red peppers, diced (jarred)
- 12 teaspoon ground coriander
- 1 teaspoon ground cumin
- 12 teaspoon ground cinnamon
- 14 teaspoon red pepper flakes
- 14 teaspoon cayenne pepper
- 2 teaspoons garlic salt
- fresh ground black pepper
- cheddar cheese (optional)
- green onion (optional)
- sour cream (optional)
- corn chips (optional)
- Remove sausages from casings and lightly fold into beef, browning all meat 3-5 min or until just cooked, drain off excess fat and set aside.
- Cook the onions in the oil over medium-low heat for 5-7 minutes or until translucent.
- Add the garlic paste and cook for 1 more minute.
- Then add all remaining ingredients and add meat.
- Bring to a boil, then reduce the heat and simmer, uncovered, for 20 minutes, stirring occasionally.
