Baked Chicken Parmesan
- 4 boneless skinless chicken breasts
- 1/2 c. flour
- 2 eggs, beaten
- 3/4 c. dry breadcrumbs
- 1/2 c. grated Parmesan, divided
- 1 Tbsp. vegetable oil
- 2 Tbsp. butter
- 2 Tbsp. flour
- 1 1/4 c. milk
- 1 tsp. salt
- 1/4 tsp. pepper
- 1/4 tsp. dried basil
- 1/4 tsp. oregano
- 3/4 c. prepared tomato sauce
- 1 c. grated Mozzarella
- Pat chicken dry and pound to flatten slightly.
- Dust chicken with 1/2 cup flour and dip into eggs.
- Combine breadcrumbs with 1/4 cup Parmesan and pat mixture onto chicken.
- Line 9 x 13-inch pan with foil; brush with oil.
- Arrange chicken in dish in a single layer.
- Bake for 20 minutes at 400u0b0.
