Basic burger buns recipe
- 575 g (20.3oz) strong bread flour
- 175 g (6.2oz) grated cheddar cheese (optional)
- 0.5 tsp salt
- 0.5 tsp sugar
- 25 g (0.9oz) unsalted butter, softened
- 3 tbsp fresh yeast
- 1 splash sunflower oil, for greasing
- 25 g (0.9oz) plain or black sesame seeds (optional)
- 1 egg, beaten together with 1 tbsp milk
- Sift the flour, salt and sugar into a large bowl.
- Add the butter (and cheese, if using) and blend well together.
- Place the yeast in a small bowl, add 365ml of water and leave the liquid to become bubbly, which takes about 1015 minutes.
- Add the yeast liquid to the flour and beat well for 78 minutes to amalgamate the dough.
- Cover the dough with a warm damp tea towel (dish towel) and place in a warm area for 1 hour to prove.
- Lightly grease a large baking tray.
- Divide the dough into 8 large balls or buns.
- Arrange the buns spaced well apart to allow for expansion as they cook; if using, sprinkle the sesame seeds over the surface of the buns.
- Cover again with the damp tea towel (dish towel), allow to prove again for 45 minutes.
- Meanwhile, preheat the oven to 220 degrees C/425F/gas mark 7.
- Brush the top of each bun with the egg and milk glaze and place in the oven for 3035 minutes.
- Remove the buns from the oven and leave to rest for 20 minutes before using.
