Apricot Glazed Pork Kebobs

  1. Preheat grill to medium-high heat.
  2. Place preserves in a 2 cup glass measure, and microvave on high for 1 minute, stirring after 30 seconds.
  3. Stir in soy sauce, lemon juice, and garlic.
  4. Place3/4 cup of the preserves mixture along with the pork in a zip-loc plastic bag, and seal.
  5. Marinate at room temperature for 30 minutes.
  6. Remove pork from bag, and discard marinade.
  7. Thread pork evenlyonto 8 (8 inch) skewers.
  8. Sprinkle pork evenly with salt, and pepper.
  9. Set aside the remaining 1/4 cup apricot mixture.
  10. Place pork on a grill rack coated with cooking spray, and baste with half of the remaining apricot mixture, and grill for 3 1/2 minutes.
  11. Turn pork over, and baste with remaining other half of remaining apricot mixture, and grill for 3 1/2 minutes or until desired degree of doneness.
  12. Remove pork from grill, and brush with remaing 1/4 cup apricot mixture that was set aside.
