Poached Salmon with Sweet Glaze

  1. Heat oven to 350 degrees F. Bring wine, butter, Old Bay seasoning and crushed red pepper flakes to a boil in a small pan.
  2. Allow to boil for 23 minutes.
  3. Put salmon in a small baking dish, with just enough room for the salmon.
  4. Pour hot wine mixture over salmon and bake until done.
  5. Time varies depending on the thickness of the fillet.
  6. Allow about 10 minutes for each inch of thickness.
  7. While fish is baking, whisk mustard and brown sugar together in a small bowl.
  8. When fish is done, remove from the oven and turn broiler on to high.
  9. Set rack 6 inches from heat source.
  10. Spoon mustard and sugar sauce over fish and return to broiler.
  11. Broil for 35 minutes until glaze is bubbly.
  12. Check frequently.
  13. Remove from broiler and spoon capers over fish.
