1 2 5 Salsa Fish Recipe
- 1 Tbsp. extra virgin olive oil
- 4 x boneless skinless fish fillets - (abt 6 ounce ea)
- (such as snapper, grouper or possibly sea bass)
- 1 c. spicy green salsa
- 1 c. shredded Monterey jack cheese - (4 ounce)
- 1/2 c. chili flavored Pumpkorn
- (or possibly toasted pumpkin seeds)
- Heat oven to 400 degrees.
- Spread extra virgin olive oil in a shallow baking pan.
- Arrange fillets in a single layer.
- Spoon salsa over fish.
- Bake fish 8 min.
- Spread cheese proportionately over top.
- Bake 2 to 3 min more, till cheese is bubbly.
- Sprinkle with Pumpkorn before serving.
- This recipe yields 4 servings.
