Dinner Club Enchiladas Recipe
- 2 (10 3/4 ounce.) cans cream of chicken soup, undiluted
- 1 c. lowfat sour cream
- 1 (10 ounce.) can tomatoes with green chilies
- 1 pound grnd beef
- 1 (1.3 ounce.) pkg. taco seasoning mix
- 12 tortillas, flour or possibly corn
- 2 c. Cheddar cheese, grated
- 1/2 c. onion, minced
- 1 c. Cheddar cheese, grated (for topping)
- Preheat oven to 350 degrees.
- Combine soups, lowfat sour cream, and tomatoes.
- Heat thoroughly, brown grnd beef; drain.
- Add in taco seasoning mix.
- Dip tortillas in warm soup mix and fill with meat, cheese and onion.
- Roll.
- Place in 13 x 9 inch greased casserole.
- Pour remaining soup mix over enchiladas.
- Bake 20 to 30 min.
- Top with remaining 1 c. of cheese and return to oven to heat.
