Homemade vegetable soup

  1. put all vegetables in a pan.
  2. fry for 5 mins.
  3. add flour + herbs, mix well.
  4. add stock slowly, a bit at a time, mixing as you go along.
  5. simmer for 20-30mins, stirring frequently so it doesnt burn.
  6. reduce heat to minimum and cook for a further 30mins until all veg are soft.
  7. serve as it is or blend for a smooth soup.
  8. perfect with fresh, crusty bread
