Homemade vegetable soup
- 1 large potatoe, skin on + diced,
- 2 large carrots, peeled + diced,
- 150 grams mushrooms, diced,
- 1/2 medium swede, peeled + diced,
- 1 large onion, sliced,
- 2 pints veg stock
- 1 tbsp mixed herbs,
- 1 salt + pepper to taste,
- 3 tbsp veg oil,
- 2 tbsp flour,
- put all vegetables in a pan.
- fry for 5 mins.
- add flour + herbs, mix well.
- add stock slowly, a bit at a time, mixing as you go along.
- simmer for 20-30mins, stirring frequently so it doesnt burn.
- reduce heat to minimum and cook for a further 30mins until all veg are soft.
- serve as it is or blend for a smooth soup.
- perfect with fresh, crusty bread
