Megans Gnocchi Parmesan
- 1 whole Onion
- 2 teaspoons Olive Oil
- 1 pound Italian Sausage (I Used Sweet Italian Turkey Sausage)
- 10 ounces, weight Baby Spinach Leaves
- 1 package Gnocchi (16 Oz.)
- 1 jar Spaghetti Sauce 24 Oz.
- 2 cups Shredded Mozzarella Cheese
- 1/2 cups Freshly Grated Parmesan Cheese
- Preheat oven to 375F.
- Spray a 9-by-13-inch pan with nonstick cooking spray.
- Chop the onion.
- Put the oil in a skillet over medium heat.
- Add onion to skillet, cooking till its soft and translucent.
- Remove the casings from the sausage, and once the onions are soft, crumble the sausage into the skillet and cook until brown.
- (While meat is browning, put on a pot of water to boil for the gnocchi.)
- When the meat is browned, remove the mixture to a bowl and set aside.
- Return the skillet to the stove, and use it to wilt the spinach.
- Add the spinach and stir for a minute or so.
- Once spinach is wilted, combine it with the meat mixture.
- When the water is boiling, cook the gnocchi according to package directions, then drain.
- Add the spaghetti sauce to the reserved meat mixture in the bowl, along with the gnocchi, then transfer the mixture to the baking dish.
- Top with mozzarella, then grate some Parmesan over the top.
- Put in the oven and bake for about 20 minutes, or until bubbling and the cheese is as brown (or not) as you like it.
- You could also add other veggies zucchini might be good and you can use whatever kind of ground meat or sausage you like.
- Easy and flexible, and something a little different!
