Beef Quesadillas
- 8 Flour Tortillas
- 2 cups Shredded Cooked Roast Beef
- 2 cups Cheddar Or Mozzarella Cheese, Shredded
- 1/4 cups Pepperoncinis (optional)
- 1 cup Salsa
- 1/2 cups Sour Cream
- Preheat oven to 350 F. Spray a large cookie sheet with non-stick spray and place four tortillas on it.
- Layer 1/4 cup of beef and 1/4 cup of cheese on each tortilla.
- Layer pepperoncini peppers on top (if using).
- Top with remaining tortillas.
- Bake for 12-15 minutes, or until cheese has melted.
- Broil for 1-2 minutes at the end to add crispness.
- Remove from oven.
- Cut into triangles with a pizza cutter.
- Serve with salsa and sour cream.
