Quick Spanish-Style Rice
- 12 large onion, finely chopped
- 2 cups water
- 2 cups instant brown rice
- 1 (15 ounce) can stewed tomatoes
- 1 teaspoon creole seasoning
- 1 dash ground red pepper (optional)
- Saute onion in a little olive oil until soft.
- Add water, bring to a boil.
- Add rice, bring back to a boil.
- Reduce heat, simmer for 4-5 minutes.
- Remove from heat and let stand for 5-7 minutes.
- Add can of stewed tomatoes, crushing with your hands as your pour them inches (you can leave chunks bigger if preferred).
- Add Creole seasoning and red pepper (more or less to taste).
- Simmer for about 10 minutes.
