Beef & Rice Soup (Sierra Leone)
- 1 lb beef, cubed
- 2 (14 ounce) cans low sodium beef broth
- 1 -2 cup water
- 4 medium chilies, finely chopped
- 1 medium onion, finely chopped
- 2 medium tomatoes, diced
- 0.5 (6 ounce) can tomato paste
- 12 teaspoon thyme
- salt and pepper, to taste
- 2 cups cooked rice
- Bring beef stock & water to a boil then add the beef.
- Lower heat & simmer 20 minutes.
- Add remaning ingredients except rice.
- Cover and continue to simmer 25 more minutes.
- Stir in the rice before serving.
- (You may need to add more water).
