Zucchini Carrot Casserole

  1. Melt butter in a large skillet over medium heat; add zucchini, carrot, and onion, and saute 8 to 10 minutes or until tender.
  2. Remove from heat; stir in sour cream and next 3 ingredients.
  3. Spoon into a lightly greased 1 quart baking dish.
  4. Sprinkle with breadcrumbs.
  5. Bake at 350F for 20 minutes or until thoroughly heated.
