Zucchini Carrot Casserole
- 2 tbsp. butter
- margarine
- 2 md. zucchini, sliced
- 2 carrots, sliced
- 1 sm. onion, chopped
- 1 container (8 oz.) sour cream
- 1 cup (4 oz.) cheddar cheese, shredded
- 1/2 tsp. salt
- 1/2 tsp. pepper
- 2 tbsp. Italian-seasoned breadcrumbs
- Melt butter in a large skillet over medium heat; add zucchini, carrot, and onion, and saute 8 to 10 minutes or until tender.
- Remove from heat; stir in sour cream and next 3 ingredients.
- Spoon into a lightly greased 1 quart baking dish.
- Sprinkle with breadcrumbs.
- Bake at 350F for 20 minutes or until thoroughly heated.
