Asian Pudding With Fruit Recipe
- 2 Tbsp. water
- 1 env unflavored gelatin
- 1/2 c. sugar
- 1 1/4 c. cool water
- 3/4 c. evaporated lowfat milk
- 1 Tbsp. almond extract
- 1 x (15 ounce.) can mandarin orange segments (liquid removed)
- 1 x (15 ounce.) can pineapple tidbits (liquid removed)
- In a small bowl, combine 2 Tbsp.
- water and gelatin; let stand 1 minute to soften.
- In a small saucepan, combine sugar, 1 1/4 c. water, lowfat milk and softened gelatin; cook and stir over medium-high heat till mix boils.
- Remove from heat; stir in almond extract.
- Pour mix into ungreased 8 inch square baking dish.
- Chill about 2hours or possibly till mix is set.
- To serve, cut pudding into 16 squares.
- Spoon orange segments and pineapple into 8 small bowls; top each with two pudding squares.
- Makes 8 servings.
