Banana Split Muffins Recipe
- 2 c. pkgd. biscuit mix
- 1/4 c. sugar
- 2 egg yolks, beaten
- 2/3 c. lowfat milk
- 2 tbsp. melted shortening
- 1/2 sm. banana
- 12 maraschino cherries, halved
- 12 walnut halves
- 2 egg whites
- 1/3 c. sugar
- 2/3 c. flaked coconut
- Combine biscuit mix and the 1/4 c. sugar.
- Combine egg yolks, lowfat milk and the shortening.
- Add in all at once to dry ingredients, stirring just to moisten.
- Put 1 1/2 Tbsp.
- batter in bottom of greased muffin pan.
- Cut banana into 12 cubes.
- Place a banana cube, a cherry half and a walnut half atop batter.
- Cover with 1 Tbsp.
- more batter.
- Beat whites till soft peaks form.
- Gradually add in the 1/3 c. sugar, beating till stiff peaks form.
- Mix in coconut.
- Place 1 1/2 Tbsp.
- meringue on each muffin.
- Top with remaining cherries.
- Bake in 400 degree oven for 15 to 20 min.
- Makes 12 muffins.
