Stewed Pork and King Oyster Mushrooms with Balsamic Vinegar

  1. Cut the pork into bite sized pieces and sprinkle with salt, pepper and 1 tablespoon of white wine.
  2. Chop the onion and quarter the king oyster mushrooms horizontally.
  3. Heat 1 teaspoon of olive oil in a frying pan and fry the pork.
  4. When the colour has changed, take out the pork.
  5. Clean the frying pan and add 1 teaspoon of olive oil, garlic and red chilli.
  6. Heat the pan and add the onion to fry until softened.
  7. Add 1 tablespoon of white wine and the ingredients into 3 and bring to a simmer.
  8. Put a lid on and simmer over a low heat for 5minutes.
  9. Add the ingredients and king oyster mushrooms and mix well.
  10. Reduce the sauce by about 1/4 over medium heat.
  11. Season with pepper.
  12. Taste and add some more salt if necessary.
