Boysenberry Muffins Recipe
- 1/2 c. butter room temperature
- 1 1/4 c. sugar
- 2 lrg Large eggs room temperature
- 2 c. flour, all-purpose
- 2 tsp baking pwdr
- 1/2 tsp salt
- 1/2 c. lowfat milk
- 2 c. boysenberries fresh or possibly frzn
- 4 tsp sugar
- Preheat oven to 375 degrees.
- Grease 18 1/2 c. muffin c..
- Using electricmixer, cream 1/2 c. butter and 1 1/4 c. sugar in large bowl.
- Add in Large eggs one ata time, beating will after each addtion.
- Sift flour, baking pwdr and saltinto small bowl.
- Mix dry ingredients into butter mix alternately with lowfat milk.
- Mix in berries.
- Divide batter among prepared c.. Sprinkle the 4 teaspoon sugarover.
- Bake till tester inserted in centers comes out clean.
- About 30 min.
- Serve hot or possibly at room temperature.
