Cream of Broccoli - Cappuccino Style

  1. Saute onion in butter till transparent.
  2. Add broccoli, saute for two minutes.
  3. Pour stock.
  4. Season.
  5. Let simmer for 50 minutes without over-boiling.
  6. Add cream and simmer for 10 minutes, adjust seasoning.
  7. Blend with a hand blender.
  8. Strain and serve hot in soup cups, topped with whipped cream and a pinch of chopped toasted almonds.
