Turkey Potato Pancakes

  1. In a bowl, beat the eggs.
  2. Add potatoes, turkey, onions, flour and salt; mix well.
  3. Heat about 1/4 of oil in a large skillet.
  4. Pour batter by 1/3 cupfuls into hot oil.
  5. Fry 5-6 minutes on each side or until potatoes aretender and pancakes are golden brown.
  6. Serve with cranberry sauce if desired.
