Impossible Taco Pie
- 1 pound Ground Beef
- 1/2 whole Onion, Chopped
- 2 Tablespoons Taco Seasoning
- 1/4 cups Salsa
- 3 whole Eggs
- 1- 1/4 cup Milk
- 1 cup Biscuit Mix (like Bisquick, Or See My Recipe Box For My Homemade Mix)
- 1 cup Shredded Cheddar Cheese
- 1 whole Tomatoes, Diced
- For Serving: Chopped Lettuce, Diced Tomatoes, Sour Cream, Salsa, Ranch Dressing
- Preheat oven to 375 F. Grease a large pie plate (roughly 10 inches x 1.5 inch deep).
- Set aside.
- In a skillet over medium heat, brown the ground beef and onion until no longer pink.
- Stir in taco seasoning and salsa.
- Spread the meat mixture into the pie plate.
- In a medium sized bowl beat eggs, milk, and biscuit mix until smooth, about 1 minute.
- Pour into the pie plate and smooth the top.
- Bake it in the heated oven for 25 minutes, then remove it from the oven and top with cheese and tomatoes.
- Bake it for 10-15 minutes longer.
- If desired, you can broil it for the last minute to brown the tomatoes.
- Remove from oven.
- Cut into wedges and serve with toppings of choice.
- I suggest lettuce, tomato, sour cream, salsa, and ranch dressing.
