cozy chicken and rice soup
- 1 tbsp olive oil
- 12 oz boneless chicken thighs
- 1 leek
- 2 stock celery diced
- 2 carrots diced
- 1 potato, peeled & diced
- 3 clove thyme & parsley
- 1/4 tsp salt and pepper
- 4 cup chicken broth
- 1/2 cup basmati rice
- 1 cup frozen peas
- add peek and celery to pan.
- cook over med heat until soft.
- aprox 2 mins.
- add carrots, potato, thyme, parsley,s&p.
- cook, stirring often for 3 mins
- heat oil over med-high heat.
- brown chicken.
- remove and cut into chunks.
- set aside
- return chicken to pot.
- stir in broth and 4 cups of water.
- bring to boil.
- reduce heat and simmer 5 mins.
- stir in rice, cook until veggies and rice are tender.
- about 13 mins.
- add peas.
- discard thyme and parsley
