cozy chicken and rice soup

  1. add peek and celery to pan.
  2. cook over med heat until soft.
  3. aprox 2 mins.
  4. add carrots, potato, thyme, parsley,s&p.
  5. cook, stirring often for 3 mins
  6. heat oil over med-high heat.
  7. brown chicken.
  8. remove and cut into chunks.
  9. set aside
  10. return chicken to pot.
  11. stir in broth and 4 cups of water.
  12. bring to boil.
  13. reduce heat and simmer 5 mins.
  14. stir in rice, cook until veggies and rice are tender.
  15. about 13 mins.
  16. add peas.
  17. discard thyme and parsley
