Green Bean and Chicken Salad
- 750 g green beans
- 2 cups cooked chicken, shredded
- 250 g cherry tomatoes, halved
- 200 g gruyere cheese, diced
- 12 cup light olive oil
- 14 cup red wine vinegar
- 2 tablespoons whole grain mustard
- 2 green onions, finely chopped
- To make Vinaigrette: Combine all the ingredients in a frying pan and warm over low heat.
- Add the chicken to vinaigrette and gently warm through.
- Blanch the beans in boiling water for 4-6 minutes.
- Drain the beans and add to the pan with the tomatoes.
- Romove from heat , stir in the cheese and toss lightly.
