Corn and Kumara Cakes
- 2 cups mashed kumara
- 2 cups canned corn kernels, drained
- 1 egg, lightly beaten
- 2 tablespoons parsley, chopped
- 2 tablespoons chives, chopped
- flour, for dusting
- 2 tablespoons olive oil
- tomatoes, sauce to serve
- Place first 5 ingredients in a bowl.
- Mix to combine.
- Season to taste.
- Form 1/4 cup measures into flat patties.
- lightly dust with flour.
- Place on lined tray.
- Chill 10 minutes.
- Heat oil in non stick fry pan.
- Cook patties for 3 minutes each side till golden.
- Serve with sauce or chutney hot, cold or at room temperature.
