Vegetable Rice Medley

  1. In a skillet over medium heat, saute the rice and onion in oil until rice is lightly browned.
  2. Add tomato, pepper, water and salt; reduce heat.
  3. Cover and simmer for 5 minutes.
  4. Stir in peas and heat through.
