Vegetable Rice Medley
- 12 cup cooked rice
- 14 cup chopped onion
- 2 teaspoons vegetable oil
- 1 medium chopped fresh tomato
- 14 cup water
- 14 teaspoon salt
- 12 cup frozen English peas
- 14 cup chopped yellow peppers (optional) or 14 cup sweet red pepper (optional)
- In a skillet over medium heat, saute the rice and onion in oil until rice is lightly browned.
- Add tomato, pepper, water and salt; reduce heat.
- Cover and simmer for 5 minutes.
- Stir in peas and heat through.
