Spicy Turkey Meatballs with Veggies
- 1 pound Extra-Lean Ground Turkey
- 1 cup Yellow Pepper, Chopped
- 1 cup Mushroom Chopped (any Type Of Your Preference)
- 1/2 cups Carrots, Chopped
- 1 cup Onion, Chopped
- 1/2 cups Parsley, Chopped
- 3/4 cups Whole Wheat Breadcrumbs
- 2 whole Eggs
- 1/2 Tablespoons Garlic Powder
- 1 teaspoon Coriander
- 1 teaspoon Cumin
- 1/2 teaspoons Chili Pepper Powder
- Salt And Pepper, to taste
- Preheat the oven to 400 degrees F. In a large bowl combine extra-lean ground turkey, yellow pepper, mushrooms, carrots, onion, parsley and whole-wheat breadcrumbs and mix carefully.
- In a medium bowl, lightly beat the eggs then add all the rest of the ingredients (the seasonings) and mix well.
- Pour the wet ingredients into the veggies and meat mixture bowl.
- Use your hands to mix everything together and roll the mixture into your preferred size meatballs.
- Spray oil cooking spray on a rimmed baking sheet and place the meatballs on it in a single layer and so they arent touching.
- Bake for approximately 25-30 minutes or until they are evenly brown.
- When they have finished baking, you can serve with a delicious tomato sauce and whole wheat spaghetti.
