Spicy Turkey Meatballs with Veggies

  1. Preheat the oven to 400 degrees F. In a large bowl combine extra-lean ground turkey, yellow pepper, mushrooms, carrots, onion, parsley and whole-wheat breadcrumbs and mix carefully.
  2. In a medium bowl, lightly beat the eggs then add all the rest of the ingredients (the seasonings) and mix well.
  3. Pour the wet ingredients into the veggies and meat mixture bowl.
  4. Use your hands to mix everything together and roll the mixture into your preferred size meatballs.
  5. Spray oil cooking spray on a rimmed baking sheet and place the meatballs on it in a single layer and so they arent touching.
  6. Bake for approximately 25-30 minutes or until they are evenly brown.
  7. When they have finished baking, you can serve with a delicious tomato sauce and whole wheat spaghetti.
