Pasta With Lobster (For 2)
- 12 lb pasta
- 1 (1 1/2 lb) lobsters
- 12 Spanish onion
- 1 carrot
- 1 stalk celery
- 4 ounces butter
- 4 ounces lobster stock
- 4 ounces white wine
- 8 ounces tomato sauce
- 8 ounces diced tomatoes
- 1) Saute chopped onion, carrot and celery in the butter.
- 2) Deglaze with the wine then add the lobster stock.
- 3) Cook for a few minutes than add the tomatoes and sauce.
- 4) Add the lobster claws and simmer for about an hour or more.
- 5) Cut the lobster tail in half lengthwise.
- Then cut into 1/2 inch portions.
- 6) Cook the pasta.
- 7) Strain the sauce.
- Add the cut up lobster tail and the pasta to the sauce.
- Serve.
