Healthy Baked Oatmeal Muffins

  1. Grease muffin tin very generously and set aside
  2. In a large bowl mix oats, brown sugar and baking powder.
  3. Then set aside
  4. In a separate bowl thoroughly whisk eggs, applesauce, milk and vanilla.
  5. Add the wet ingredients to the dry and mix thoroughly
  6. Scoop the batter into prepared muffin tins
  7. Be creative and add toppings.
  8. Your imagination is the only limit!
  9. Pictured: raspberries, blackberries drizzled with honey, slivered almonds.
  10. Bake in a preheated 375 oven for 30 minutes
  11. Muffins come out of tin better if you let them set about 10 minutes.
  12. These freeze well.
  13. I make a batch and freeze for work.
