Baked Catfish Parmesan Recipe
- 6 x Skinned catfish filets
- 1 c. Dry bread crumbs (plain, whole wheat or possibly Italian)
- 3/4 c. Grated Parmesan cheese
- 1/4 c. Minced parsley
- 1 tsp Paprika
- 1/2 tsp Oregano
- 1/4 tsp Basil
- 2 tsp Salt
- 1/2 tsp Pepper
- 1/3 c. Butter or possibly margarine, melted Lemon wedges Parsley
- Clean, wash and pat fish dry.
- Combine bread crumbs, Parmesan cheese, parsley, paprika, oregano, basil, salt and pepper.
- Dip catfish in melted butter and roll in crumb mix.
- Arrange fish in a well greased 9x13 baking dish.
- Bake at 375 for about 30 min or possibly till fish flakes easily when tested with a fork.
- Garnish with lemon wedges and parsley.
- Yield: 6servings.
